Simple Sourdough Bread

Ingredients
1 cup sour dough starter
2 cups warm water
2 cups unbleached flour
2 cups skim milk
2 tsp. honey
1 Tbsp. dry yeast
2 cups whole wheat flour
1/4 cup wheat germ
1 tsp. salt
2 tsp. baking powder

Steps

  1. Combine starter, 2 cups warm water, and 2 cups unbleached flour in a large bowl.
  2. Cover and let stand 8 to 12 hours (sponge).
  3. Scald milk. Stir in honey and allow to cool to lukewarm.
  4. Sprinkle yeast onto milk and stir until dissolved.
  5. Combine this with sponge.
  6. Add 2 cups of the whole wheat flour and the wheat germ. Mix well.
  7. Sprinkle salt and baking soda (likely intended to read baking powder, matching the ingredient list) into dough and stir gently.
  8. Cover and let rise 30 minutes.
  9. Add enough unbleached flour until dough is very stiff.
  10. Knead 8 minutes on a floured surface.
  11. Divide in half and shape into loaves.
    Place in non-stick loaf pans and let rise until doubled.
  12. Bake at 400°F for 20 minutes.
  13. Reduce heat to 325°F and bake until done.
    Bread is done when it sounds hollow when thumped on the bottom.
