Simple Sourdough Bread
Ingredients
1 cup sour dough starter
2 cups warm water
2 cups unbleached flour
2 cups skim milk
2 tsp. honey
1 Tbsp. dry yeast
2 cups whole wheat flour
1/4 cup wheat germ
1 tsp. salt
2 tsp. baking powder
Steps
- Combine starter, 2 cups warm water, and 2 cups unbleached flour in a large bowl.
- Cover and let stand 8 to 12 hours (sponge).
- Scald milk. Stir in honey and allow to cool to lukewarm.
- Sprinkle yeast onto milk and stir until dissolved.
- Combine this with sponge.
- Add 2 cups of the whole wheat flour and the wheat germ. Mix well.
- Sprinkle salt and baking soda (likely intended to read baking powder, matching the ingredient list) into dough and stir gently.
- Cover and let rise 30 minutes.
- Add enough unbleached flour until dough is very stiff.
- Knead 8 minutes on a floured surface.
- Divide in half and shape into loaves.
Place in non-stick loaf pans and let rise until doubled. - Bake at 400°F for 20 minutes.
- Reduce heat to 325°F and bake until done.
Bread is done when it sounds hollow when thumped on the bottom.
